tart with fresh salmon, leeks and mornay sauce

Yet another recipe from my childhood in eastern France, leek flamiche, a delicious leek tart with mornay sauce (bechamel with Gruyère), which I modify a little here by adding fresh sushi quality salmon. Made with homemade shortcrust pastry, 100% butter, of course! To taste absolutely.
